Where your saves live
Your three save slots are files in the app's private storage on your iPhone. They never leave the device on their own. iCloud Backup and computer backups include them, so restoring a backup restores your saves. Deleting the app deletes them.
If a save cannot be read
Every time the game saves, it keeps the previous copy as a backup. If a save file is ever damaged, the game loads that backup automatically and tells you so: “Your last save could not be read; the backup from HH:MM was loaded.” You lose at most the play since that backup. If both copies are damaged the game says so and leaves both files untouched, so nothing is overwritten while you contact support.
